Parmesan Roasted Red Potatoes

No fancy ingredients needed, just pantry staples transformed into something truly special. Toss potatoes with oil, Parmesan cheese and your favorite herbs, then let the oven work its magic. The perfect textural contrast, each bite offering a satisfying crunch followed by a pillowy cloud of potato. Pair these beauties with anything from steak and chicken to roasted vegetables and salads. They're guaranteed to steal the show.

Ingredients

  • cooking spray
  • 2 lb baby red potatoes* halved
  • 2 tbsp minced parsley for garnish optional

Parmesan Seasoning

  • cup olive or avocado oil
  • 3 cloves garlic minced
  • tsp salt
  • ½ tsp black pepper
  • tsp Italian seasoning
  • cup finely grated Parmesan cheese

Instructions

  • Preheat oven to 400 degrees F. Line sheet pan with foil and coat with cooking spray.
  • Combine parmesan seasoning ingredients in a large bowl. Add cut potatoes and toss to coat. If your bowl comes with a lid, cover and shake.
  • Spread potatoes in a single layer on baking sheet. Bake for 20 minutes, flip potatoes, bake for an additional 15-20 minutes or until golden brown and fork tender.
  • Sprinkle with parsley, if desired, and serve.

Notes

*If using large red potatoes, cut into quarters.
