Parmesan Roasted Red Potatoes

Ingredients

  • cooking spray
  • 2 lb baby red potatoes* halved
  • 2 tbsp minced parsley for garnish optional

Parmesan Seasoning

  • cup olive or avocado oil
  • 3 cloves garlic minced
  • tsp salt
  • ½ tsp black pepper
  • tsp Italian seasoning
  • cup finely grated Parmesan cheese

Instructions

  • Preheat oven to 400 degrees F. Line sheet pan with foil and coat with cooking spray.
  • Combine parmesan seasoning ingredients in a large bowl. Add cut potatoes and toss to coat. If your bowl comes with a lid, cover and shake.
  • Spread potatoes in a single layer on baking sheet. Bake for 20 minutes, flip potatoes, bake for an additional 15-20 minutes or until golden brown and fork tender.
  • Sprinkle with parsley, if desired, and serve.

Notes

*If using large red potatoes, cut into quarters.
