Ingredients

2lbbaby red potatoes*halved
2tbspminced parsley for garnishoptional
Parmesan Seasoning
⅓cupolive or avocado oil
3clovesgarlicminced
1½tspsalt
½tspblack pepper
1½tspItalian seasoning
⅓cupfinely grated Parmesan cheese
Instructions
Preheat oven to 400 degrees F. Line sheet pan with foil and coat with cooking spray.
Combine parmesan seasoning ingredients in a large bowl. Add cut potatoes and toss to coat. If your bowl comes with a lid, cover and shake.
Spread potatoes in a single layer on baking sheet. Bake for 20 minutes, flip potatoes, bake for an additional 15-20 minutes or until golden brown and fork tender.
